Jelly Slice

Seeing mention of jelly on the My Apron Instagram,  I was reminded of Jelly Slice that one of my colleagues at work used to bring along to share.

It was delicious. It was flavoursome and refreshing and looked very cheerful. It wouldn’t take long for the pieces to disappear from the plate.

My friend made a biscuit base, like a cheesecake base, and spread it onto a slice pan. Upon this she applied a white layer which was made of a can of condensed milk (not the sweetened one), thickened with 2 1/2 teaspoons of gelatine softened in 1/2 or so cup boiling water.  Once this was set she would pour over a layer of red jelly and let it set. Some extra gelatine (about 2 teaspoons) can be added to ensure it sets well. She would then cut the slice into small pieces which were easily eaten as finger food at work.

Ah, memories. Now that I have sent myself down memory lane, I might make this for Christmas. It does look rather festive.
