Passionfruit and lemon ice tea

I caught up with my friend this morning, and had an amazing Bubble Tea. I ordered one with passionfruit and lemon, and my friend had one with rockmelon. It wasn’t my first time to have bubble tea, but these flavours were delicious!

Whilst hanging out, we got talking about My Apron. To my delight my friend was excited to use it, especially as she will be getting married next year and will now be able to easily share her family’s recipes with her sisters and parents.

When I got home I found a good recipe on taste.com.au for lemon, mint and passionfruit iced tea. I picked some passionfruit, lemon and mint from my garden, and the rest of the ingredients from my pantry. I kept it in the fridge for half an hour, it tastes wonderful! I’ll share the recipe with you below.

Lemon, mint and passionfruit iced tea

Preparation: 15 minutes .    Serves: 8.

  • 3/4 cup orange juice
  • 4 passionfruit, halved
  • 1/2 cup small fresh mint leaves
  • 1 lemon, scrubbed, thinly sliced
  • 1 orange, scrubbed, halved, thinly sliced ice cubes, to serve

  1. Place tea bags in a large, heatproof jug. Add boiling water. Stand for 3 minutes. Remove and discard tea bags.
  2. Add sugar. Stir until dissolved. Stir in lemon juice, orange juice and passionfruit pulp. Refrigerate until ready to serve.
  3. Add mint, lemon and orange slices. Serve over ice.
